Strawberry Season Snack! (Plus, PB'n'J . . . Salad!)

I love strawberry season!  There is no fruit that makes me quite so happy as a fresh springtime strawberry! This fruit is so versatile in recipes as well as fantastic all on it's own!

We were able to get 2 lbs of fresh strawberries over the weekend from Costco and I am greatly enjoying them!

My absolute favorite way to enjoy strawberries is to stuff them/make them into little 'sammies.'
We like to use softened cream cheese sweetened with a little local raw honey. Sooooo, good!


These snacks feel like an luxurious indulgence, yet they are so healthful and easy that there's really no reason why they couldn't become a regular thing! At least during strawberry season.

Another way that I enjoyed them this past weekend was on a salad. Now I have been eating strawberry spinach salad for over a decade, but this time I decided to try a little experiment based on my Peanut Butter and Honey Salad.

Since I had strawberries available, I figured it was about time I tried out my favorite sweet salad with a strawberry "jam" twist! I didn't actually make jam though . . . All I did was crush some of the berries in a bowl with my potato masher and stirred in a bit of honey (which proved to be unnecessary because the berries were already plenty sweet.) and then I drizzled this raw strawberry goodness over my salad along with my usual peanut butter dressing and some sliced strawberries.
It was lovely!

 If you love strawberries as much as I do, and/or if you miss having a good ol' PB'n'J sandwich because you cannot digest bread anymore; I recommend you try this salad! It's superbly refreshing!

Peanut Butter & Honey . . . Salad?

One of the most useful things I've learned about food since I cut out grains and cane sugar is that anything that makes a good sandwich can make a better salad!

Yes! It's true! Just think of your favorite sandwich combo, and then replace the bread with a bed of greens. Some of the possibilities here seem obvious . . . BLT, Philly Steak & Cheese, Meatball,  Tuna salad, BBQ chicken, Taco, etc . . . What wasn't so obvious to me was that this truth is not limited to savory sandwiches.

One of my favorites from my childhood was Peanut Butter and Honey. Especially if the peanut butter was crunchy. I liked smooth peanut butter with jam/jelly combos, but for some reason the combo of honey with nut chunks has always been extra yummy to me.

Since I've been married, yet before I discovered my digestive issues with bread, my family would often make peanut butter honey sandwiches for lunch. We discovered adding a layer of regular butter to the bread was key to making it extra good---Not too dry, and it kept the honey from soaking into the bread. (And Elvis: PB and Banana was also a family fave.)

After discovering that I couldn't eat bread anymore I gave up on the idea of enjoying this flavor combo for a few years. it was sad though, and hard. Then last Summer after watching my husband and kids still enjoying their PBHs I suddenly had the inspiration to try it out with my sandwich to salad theory. I had already been eating things like chili, stir-fry, stroganoff, bbq meat, and other such dinner menu items over salad. (It's also true that anything you can eat over pasta or rice is great on salad.)

Anyway, I tried it, and . . .  Surprise!!!!!
It was AMAZING!!! The nostalgic flavor I had missed was there in full force! It was even richer and more satisfying than a sandwich because I didn't have the flavor of bread competing with the PB and honey. Spinach is especially good at disappearing into the background and allowing other flavors to shine.  After enjoying this discovery for a few months I finally managed to take some photos to give some of you some inspiration of all the many possibilities this salad combo offers.

Start with a bed of salad greens . . . in this case organic baby spinach, and organic Spring Mix from Costco.
 Put about a tablespoon each of peanut butter* and butter* into a small dish and place in the oven on warm until the butter is melty.
 Stir until you have a smooth peanut butter dressing.
 Top your salad with the dressing . . .
 Drizzle on some local raw honey* . . .
 Here are some other optional toppings that you might enjoy to bulk things up:

If you are adding nuts, especially almonds, be sure to crush them so they are easier to eat over your salad.
 Slice your bananas . . .
 Add sliced apples if desired (I usually don't do the apples, I prefer the bananas by themselves; but you know, you can use what you have.)
 I always put salt and pepper on my salads, even my sweet ones because I like the way it enhances all the different flavors.
 Another possible seasoning that works well with PB and Honey is cinnamon.* (If you can get real, fresh cinnamon, that will of course be a plus.)
 Mix it all together and enjoy!
Mmm, the taste of nostalgia blended with high nutrition and success are so very sweet!

Julie Surprise: Flourless Chocolate Zucchini Cake

Yesterday marked the anniversary of my youngest daughter's second birthday. (WHAT???)
Every time we had mentioned to her that she would be having a birthday in the days leading up to it, she would always respond with, "Yeah! Cake!" Then, the night before when I told her I needed to go to bed so I could make her a cake the next day she started begging for chocolate.
Luckily, that had already been my plan. Thanks to the generosity of my awesome neighbors, I had fresh garden produce, including raspberries and zucchini from my friend Kelly. (One needs something fibrous if one is going to make a cake without flour.)
I also ended up borrowing some cocoa powder from my friend Jenni a few doors down because, wouldn't you know? I totally forgot we were all out until I started making the cake!
I just felt that I ought to mention these circumstances so that we could give credit were credit is due.
Thanks so much ladies! This cake couldn't have happened without you!



Flourless Chocolate Zucchini Cake
Ingredients
  • 1/2 cup of Unsweetened Shredded Coconut 
  • 1/2 cup of Peanut Butter (Or Almond Butter etc.)
  • 2 cups of Coconut Palm Sugar
  • 8 Eggs (Separated)
  • 1 Huge Zucchini, (seeded, shredded, drain then blended smooth).
  • 1 tsp salt
  • 1/2 tsp Cinnamon
  • 1 tsp Vanilla Extract
  • 4 Tbsp of Coconut Oil or Butter
  • 3/4 cup of Cocoa Powder
  • 1/2 cup fresh raspberries (opt.)
Instructions
  1. Preheat oven to 350 degrees. In your food processor, pulverize coconut until almost a butter. Add this and the rest of the ingredients except the egg whites to your food processor or a stand mixer and mix everything together. 
  2. Finally, in a separate bowl, beat the egg whites until stiff peaks form and gently fold into the rest of the batter. Some streaks may remain. 
  3. Grease three 9"  pie pans with butter and line with circles of parchment paper. Evenly divide the batter between them. 
  4. Bake at 350 degrees for 45 minutes, or until a toothpick inserted in the center comes out clean.
  5. Carefully remove cakes to a cooling rack until cool. (You may want to refrigerate it, or put it into the freezer to speed up the process and help it firm up.)
  6. Frost with chocolate buttercream icing and top with fresh raspberries if desired.


Chocolate Buttercream Icing
Ingredients
  • 1-2 cups of Coconut Palm Sugar (Ground to a fine powder)*
  • 1 tsp Vanilla Extract
  • 2 1/4 cups of Coconut Oil and/or Butter
  • 1/4 cup of Cocoa Powder (Or more for a darker chocolate.)
  • A dash of salt (if your butter is unsalted)
Instructions
  1. Whisk together sugar and cocoa until well blended. Then add to wet ingredients and whip until fluffy.
  2. If the consistency is too runny, chill for 10-15 minutes then whip again. 
  3. Be sure the cake is well cooled before you ice it.
* I usually grind my coconut sugar in my mini food processor to reduce it's gritty texture in certain recipes like frosting. Because of this, 1 cup of sugar may reduce down to a bit less than 1 cup, so you might want to add a bit more than a cup. Also, a lot of people who use coconut sugar find it to be slightly less sweet than cane sugar so they may wish to increase the amount regardless. I would recommend using up to two cups if you want the icing very sweet, but do not go beyond that.  We tried two cups and it was extremely rich. Luckily the milder sweetness of the dark chocolate cake helped counterbalance that and the fresh raspberries added a refreshing contrast of tartness. 

The Birthday Girl really loved the cake! She kept asking for more and more. I have to admit it was pretty amazing, even if I do say so myself. 


This cake is super moist, (almost like a fudgey pudding) even after draining the zucchini as much as I had patience for. I could have drained it longer, but I wanted  to get the cake finished before bedtime. :)
Anyway, it really doesn't need frosting, and as I noted above the frosting was super rich. It was almost too much, so I would recommend reducing the sugar a bit if you use the icing, or maybe at least add some cream cheese. (We would have done that if we'd had any.)

I was so happy this recipe looked almost as pretty as it tasted because my last flourless cake was a bit less than photogenic and I really wanted a pretty cake to film for one of my upcoming music videos. Julie Surprise: Nostalgic Snacktime

Even as a young kid I used to like experimenting with food. I remember a day when I asked my Mom to make me a peanut butter cheese and lettuce sandwich. She thought it was strange but she made it just the same. Surprisingly tasty that one. Now that I think about it, I think it must have been inspired by this book. A definite childhood favorite of mine.

Another favorite sandwich of mine was peanut butter banana, and after a time I invented the variation of peanut butter raisin. I think by the time I had come up with this I was in my tweens and making my own lunch. Ants on a log were another regular treat. So, it was only a matter of time before I came to this little beauty.
It's basically ants on a log but with a banana instead. I used to call it a banana sausage when I was young because I would eat it like a sausage with a knife and fork. Now that I'm older I'm thinking that name has to go. Looking at that first image there, the only thing that comes to mind is Monkey's Smile. Ha, ha.
My girls love posing while they eat. :}
