I just found your blog and keep reading! How's the "Meatless Mondays" going? I try to have a dinner or two each week without meat, and most of the time we really don't miss it at all! Here are a few recipes/ideas:<br />Lentil Soup. Surprisingly good. I just shared it on my blog. <br />http://natleeandlife.blogspot.com/2011/12/lentil-soup.html<br />Baked potatoes with steamed broccoli and carrots. (cheese and sour cream too if you're up for that)<br />Bean burritos or Beans and bread. Simple and cheap. I do cook and season the dried beans (usually pinto or black) so there's more flavor there then just the stuff out of a can.<br />Indian curry. It's stuffed bell peppers but the stuffing would be great in tacos or tortillas, too.
